I only recently learned that you can make mashed potatoes the day before you need them, and actually have them turn out yummy and fresh tasting. Here is the recipe I use…
Peal, quarter and boil 5 Lbs. of potatoes (I use whatever is one sale:)
Once they are finished cooking (soft enough to cut in half with a fork), put the potatoes in a colander to drain. Place the pot used for boiling the potatoes back on the warm stovetop. Return the potatoes to the pot and add 1 and a half sticks of butter, and mash the potatoes with a hand masher. Add 1 bar of cream cheese, and mash, add 1/2 cup of heavy cream, and you guessed it, mash. Then add the seasoning of your choice (we like Everglades or Lawry’s) and spread into a 9 x 13 baking dish.
Mine are sitting on the stove cooling off, once they are cool they will go in the fridge, ready for tomorrow. Close to dinner time, all I need to do is add a few pats of butter to the top, and slide it in a warm oven to heat through. Wanna see?
