Some of you have let me know how much you like the “Wednesday Dinners” I’ve been posting, so I’ll share another with you :)
In honor of the record low temperatures we had last night here in Florida(39 degrees), I give you…..
Cook all Day, or Not Chili
Easy, and fast Chili.
Start by browning 2 pounds of ground beef or venision.
While browning the meat you can add 3 cloves of minced garlic and 1 onion, diced. Or you can choose the path of least resistance (like your’s truly) and add some onion and garlic powder in a minute.
While the meat is browning, gather the following items…
That’s:
1-8 ounce can of tomato sauce
1-14.5 ounce can of diced tomatoes
2-14.5 ounce cans of Italian-style diced tomatoes
1-15 ounce can Kidney beans
1-15 ounce can Pinto beans
(No, I am not on Publix’s payroll, and yes I do still shop there, even though they haven’t responded about my petition.)
Once the meat is nice and brown, dump it into a crock pot and add all of the above.
Then, add:
(if you chose the path of least resistance) 3/4tsp. garlic powder and 1 tsp. of onion powder
1 cup water
2 tablespoons chili powder
2 tablespoons white sugar
1 tablespoon salt
1 teaspoon ground black pepper
You can also add 1 tablespoon of hot pepper sauce, but I don’t. Mr. Overkill and I add our hot sauce individually. Why??? Cause he can’t handle it.
No, I jest, it’s for the kiddos, of course!
The beauty of this dish is, now everything is cooked and you only need to heat it through. Me, I dumped it in the crock pot and set it on high, because I need it to be hot in about 2 hours. You could set it on low and let it cook all day, or you could even heat it on the stove top. A must have with this one though is saltine crackers, and/or corn bread. YUM!
One thing I haven’t mentioned about most of these “crock pot” meals is that they stay warm well. By that I mean that the kiddos and I can eat at 5:00, and head out for church. Then, when Mr. OK gets home later, it’s still warm, not cold and mushy.
Isn’t it pretty? I know, I’m weird. I think some food’s are really beautiful, like stuffing, but that’s another post :)
