I thought I would share what I am making for dinner tonight. Quick, mind you! Tonight’s dinner….drum roll please…..is Spaghetti and Meatballs!
Spaghetti in and of itself is a very quick dinner. But meatballs, that takes a bit more time. So, whenever I make meatballs, I make double of what we’ll need. Then, freeze the other half. So, for tonight’s dinner all I had to do was put the frozen meatballs in the crockpot on low, until they were thawed out. Then I added one jar of spaghetti sauce. Presto, the hard part is done, left to sit until later. Closer to dinner time, all I will have to do is boil the spaghetti.
Now I have to say that I am VERY picky when it comes to meatballs. They are not all created equal! I DO NOT like the kind you buy at Sam’s, Costco, BJ’s whatever. Sorry, I don’t. So, I will share my recipe for meatballs with you.
Meatballs
1 lb ground beef or venison
3/4 cup bread crumbs
1 tsp. oregano
1 tsp. basil
2 tblsp. minced garlic
2 tblsp. parsley
2 tblsp. grated Parmesan cheese
1 egg, beaten
1 jar of Ragu parmesan and romano flavor
Preheat oven to 350 degrees.
Mix all ingredients, except the spaghetti sauce. You can mix this by hand, or I use my Bosch mixer with the dough hook. Shape into meatballs. I try to keep mine at about an inch and half in diameter. Bake in preheat oven for about 15-20 minutes, or until cooked through. I usually make these earlier in the day, so when they are finished cooking, I pop them into the crock pot with the spaghetti sauce and let them “get familiar” :) But, you can heat the spaghetti sauce on the stove top and then add the meatballs.
These are fabulous for spaghetti or meatball subs! YYYUUUMMM!
