So, I have had an over-abundance of peppers this summer.
I decided to freeze them. There are a couple of ways that you can freeze peppers. AwesoMom simply cuts the pepper in half , cleans it and freezes. This way, she can use the peppers for a great variety of things from stuffed peppers to pizza toppings.
Since the Frazzled Mama’s crew aren’t big fans of stuffed peppers, I decided to chop the peppers in large chunks, for use as pizza toppings, stir-fry peppers, and fajitas – yum!
However, I didn’t want to have several bags of chopped peppers in my freezer, you know from harvesting at different times and then freezing. So, I decided to experiment with “flash freezing.” Now, in the retail food market, they flash freeze veggies all the time, but I don’t have the proper equipment to actually flash freeze my peppers. So, I improvised.
I placed my peppers on a cookie sheet in one layer…
Then, I sat the cookie sheets in the deep freeze over night….
The next day, I was able to pour the individually frozen pepper chunks into one freezer storage bag. When I harvest again, I can repeat the process and still only have one bag of peppers, not 3 or 4!
You know me, if I have too many of one thing..it will get lost or forgotten about.
Yeah, we cut ours in pieces, too. Are’s are green and red though. I have never seen a purple pepper, pretty cool!
I put my fresh cut ones with the frozen ones, too. It seems to work ok.

Do you really put the fresh cut ones right in? They don’t get clumpy????
