Our family has been on a granola kick lately. Everyone was enjoying their store-bought granola…that I couldn’t eat because they all have a TON of sugar in them. So, in typical Frazzled Mama fashion, I did some research on granola recipes that didn’t involve processed sugar. After looking through bunches of great-looking recipes, I came up with my own version.
There are three things I love about how my granola turned out:
1. No white or brown sugar.
2. Plain granola, no nuts!
3. It is FAST.
The Frazzled Mama’s Plain and Simple Granola
Preheat oven to 350 degrees. Prep a cookie sheet with a little cooking spray. Heat 1/2 cup pure maple syrup over medium high heat in a medium sized sauce pan. Remove the pan from heat just before it boils. Add 1/2 teaspoon salt and 1/2 teaspoon vanilla extract. Stir until thoroughly mixed. Add 2 cups of rolled oats* to the syrup mix and stir until all the oats are well coated. Pour the coated oats onto the prepared cookie sheet and spread out into a thin layer. Bake at 350 for 10 minutes. Then, stir the oats and re-spread, cook for another 10 minutes. Stir once more and finish baking for about 4 minutes. Let cool and consume ;)
Calories: 1/2 cup of Plain and Simple Granola has 200 calories.
*If you are gluten intolerant, make sure you use gluten free rolled oats.
