Ok, let’s start off with the nutritional value on this one:
Not too shabby, low fat, reasonable calories.
Now, from the critics corner:
Bubba – They were pretty good. Really, really good. I was surprised that they had carrots, oatmeal and applesauce.
Sugar Belle– I was surprised, it was real good.
Tootle Bug– Bad. Then a smile. Good, they were good mom.
Little Man – Good. He didn’t think he would like the topping, but he said “I like it now, with the bottom.”
Mr. Ok also enjoyed them, as did I. They were very tasty and moist. You really couldn’t taste the applesauce or carrots in them.
Prep – They weren’t hard at all to make and only took about as long as any other muffin recipe. The only extra step was to puree the carrots.
I think this one is a keeper!
What if you use baby food carrots instead of having to puree them?? Ha ha !! Just Kidding.. Sounds good, I am going to have to get that recipe. Is there no sugar in them? I didn’t see a listing on the nutritional facts?
Actually, you can :) There is sugar, ummm brown sugar. I want to say 3/4 cup total. I found the recipe posted online, check it out! Applesauce Muffins
I’m sure all of your readers will know this tip but I’ll repeat it just incase they have not…I always use applesauce in my cakes instead of oil. If the recipe calls for 1/3 cup of oil, I use 1/3 cup of applesauce. It makes the cake more moist and delicious. You’d never know that I used unsweetened applesauce.
